Got Zucchini Coming Out of Everywhere?

Try making this zucchini relish – delicious on hamburgers and grilled chicken sandwiches!
ZUCCHINI RELISH (makes 7 pints)
 6 large zucchini  (remove seeds)
4 large onions
1 green bell pepper
1 red bell pepper
1/2 cup salt
3 cups sugar
2 1/2 cups vinegar
1-cup water
2 teaspoons tumeric
2 teaspoons each: celery seed and mustard seed
  • chop zucchini, onions, and bell peppers or run them through the medium blade of a food chopper
  • cover chopped or ground vegetables in an 8-quart bowl with ice water and add the 1/2 cup salt.  mix and let stand for one hour.  Drain.  Rinse thoroughly with more fresh cold water.  Drain again.
  • Make a syrup of the sugar, vinegar, water, and seasonings by placing in large saucepan and boiling for 3 minutes.  Add the drained vegetables and simmer for about 12 minutes; be sure they are hot all the way through.
  • Ladle into clean hot jars.
